If you happen to come across this shop, tucked away in train stations or department stores around Japan, don't hesitate and buy their cheese tarts.

It's a small shop, specialised in cheese tarts only, originally from Hokkaido — Japan's dairy heartland. We spotted BAKE in Tokyo Shinjuku, Sendai, and Kagoshima. We've even come across BAKE outside Japan — we tried one in Seoul, and it held up just as well.

The warm, creamy, fluffy cheese mousse and its crunchy crust make for a simple but excellent combination. Baked on the spot and often served warm, they come with a small price tag, around 250 yen.

Sometimes they have seasonal variations, but the classic tart is all that's necessary.
